Fall inspired grain bowl
Time required: 30minutes
Yield: 2 to 4 portions
INGREDIENTS
- 3 cups (750 g) brown rice (long grain type)
- 1 cup (250 g) green lentils, cooked
- 1 package (454 g) oyster or button mushrooms
- 1 cup (250 g) spinach or kale, quick-simmered
- 1 cup (250 g) hot water
- ½ avocado cut into strips, lengthwise
- 5-6 steamed asparagus spears
- ½ cup LeGrand cheese (of your choice)
- 4 tbsp LeGrand Salted Butter
- 2 green onions, chopped
- A few sprigs of fresh thyme
Comforting and hearty, this grain bowl is the perfect addition to your cozy weekends and fall windy evenings!
You have an unlimited choice among vegetables and grains to make your bowl, so get creative and have fun!
INSTRUCTIONS
- Soak the minced onion in lemon juice for 10 minutes.
- Steam the radishes with their green tops for 5 minutes and when ready, thinly slice the radishes keeping some tops attached.
- Steam the green peas for only a few minutes (save their tender green colour!).
- Mash some peas and leave the hole with a little chopped mint and chives.
- Spread the cheese on your crackers (as thick as you like) and place on a serving board.
- Layer the crackers with the radishes, onions and drop some of the “green mix” of peas, mint and chive here and there for effect.
- Top with a few sunflower sprouts and your presentation will be lovely!
