Grilled zucchini with vegan tzatziki

INGREDIENTS
Tzatziki:
- 1 cup LeGrand unsweetened Vegan Yogurt
- ½ grated cucumber
- 2 cloves of garlic
- A few sprigs of dill, finely chopped
- A few mint leaves, finely chopped
- Salt and pepper to taste
Zucchini:
- 2 tbsp LeGrand Vegan Butter
- 2 green zucchinis, cut lengthwise in thirds
- Salt and pepper to taste
Garnishes:
- LeGrand Chimichurri
- A few fresh herbs
Locally harvested, grilled zucchini is one of the great pleasures of summer. In this easy recipe, which takes less than 10 minutes to make, vegan tzatziki with fresh herbs balances the mild sweetness of zucchini in the most delicious way possible.
INSTRUCTIONS
- Slice the zucchini and lightly coat with salt and pepper;
- In a frying pan over medium heat, melt the butter and add the zucchini. Cook until the edges are golden brown. Remove from heat and set aside;
- In a mixing bowl, whisk together yogurt, grated cucumber, fresh herbs, garlic, salt and pepper until well blended;
- To serve, place a generous serving of tzatziki on a plate and top with grilled zucchini. Garnish with chimichurri and a few fresh herbs.
