Breakfast bagel with garden pesto

INGREDIENTS
- 2 sesame bagels
- 2 eggs
- 1 tbsp of milk (or plant-based milk)
- 1 pinch of salt
- 1 pinch of pepper
- 1 tsp of unsalted vegan butter
- 2 tbsp of garden pesto
- ½ cup fresh arugula
- ½ ripe avocado (optional, for garnish)

INSTRUCTIONS
- In a small bowl, whisk the eggs, milk, salt and pepper. Heat the unsalted vegan butter in a skillet over medium heat. Pour in the egg mixture and cook, stirring lightly.
- Slice the bagels in half and toast them lightly.
- Spread the garden pesto on each bagel half. Place a portion of egg on each bagel half. Top with a handful of arugula and, if desired, a few avocado slices. Close with the top half of the bagel.
