Breakfast bagel with garden pesto

INGREDIENTS

  • 2 sesame bagels
  • 2 eggs
  • 1 tbsp of milk (or plant-based milk)
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 tsp of unsalted vegan butter
  • 2 tbsp of garden pesto
  • ½ cup fresh arugula
  • ½ ripe avocado (optional, for garnish)

INSTRUCTIONS

  1. In a small bowl, whisk the eggs, milk, salt and pepper. Heat the unsalted vegan butter in a skillet over medium heat. Pour in the egg mixture and cook, stirring lightly.
  2. Slice the bagels in half and toast them lightly.
  3. Spread the garden pesto on each bagel half. Place a portion of egg on each bagel half. Top with a handful of arugula and, if desired, a few avocado slices. Close with the top half of the bagel.
