Garden pesto lasagna

INGREDIENTS
- 9 to 12 lasagna sheets (fresh or pre-cooked)
- 1 pouch of garden pesto
- 300g of ricotta cheese
- 200g of shredded mozzarella
- 50g of grated parmesan
- 200g of fresh spinach
- 2 tbsp of olive oil
- Salt and pepper, to taste
A creamy and fragrant lasagna, where our garden pesto blends with the sweetness of spinach and the melting mixture of grilled cheese. Perfect for a comforting family meal, it combines simplicity and fresh flavors.
INSTRUCTIONS
- In a large skillet, heat the olive oil over medium heat. Add the spinach and cook for 1-2 minutes, until wilted. Season lightly with salt and pepper. Remove from the heat and set aside.
- In a mixing bowl, combine the ricotta cheese with the garden pesto until smooth and well blended.
- Preheat the oven to 180°C (350°F). In a baking dish, spread a thin layer of the ricotta-pesto mixture. Add a layer of lasagna sheets, then spread some of the ricotta-pesto mixture on top. Add a portion of the spinach and sprinkle with mozzarella. Repeat the process until all ingredients are used, finishing with a layer of pasta.
- Cover the top layer with mozzarella and parmesan.
- Bake for 30-35 minutes, until the cheese is golden and bubbly. Let rest for 5 minutes before serving.
