INGREDIENTS

  • 2 cups of cubed watermelon
  • 160–200 g of cubed halloumi cheese
  • A few fresh basil leaves
  • ¼ cup chimichurri pesto
  • 8 small skewers

 

Perfect for hot summer days, this watermelon, grilled halloumi, and pesto skewer recipe combines freshness, flavor, and originality with effortless ease.

INSTRUCTIONS

  1. Sear the halloumi in a skillet for 2–3 minutes on each side until golden.
  2. Assemble the skewers: watermelon, basil, halloumi, then watermelon again.
  3. Drizzle with chimichurri pesto or serve it on the side.
