Spaghettis with northern shrimp and classic pesto

INGREDIENTS
- 400g of spaghetti
- 200g of cooked, peeled northern shrimps
- 1 pouch of classic pesto
- 150g of cherry tomatoes or assorted tomatoes, diced
- 40g of freshly grated parmesan
- 60g of fresh arugula
- 2 tbsp of olive oil
- Salt and pepper, to taste
A refined and quick dish to prepare, combining the sweetness of the northern shrimps with the aroma of our classic pesto, enhaced by the freshness of the arugula and the deliciousness of the parmesan.
INSTRUCTIONS
- Bring to a boil a large pot of salted water. Cook the spaghetti according to package instructions. Drain, reserving a bit of the cooking water.
- In a large skillet, heat the olive oil over medium heat. Add the diced tomatoes and sauté for 2-3 minutes until slightly soften. Stir in the northern shrimp and warm gently for 1 minute.
- Reduce the heat to low, add the classic pesto to the skillet and stir gently. Add the spaghetti and mix well. If needed, add a bit of the reserved pasta water to loosen the sauce.
- Divide the pasta among the plates. Top generously with fresh arugula, parmesan, salt and pepper to taste.
