Chimichurri macaroni salad with Mac ‘N Cheeze sauce

Yield: 2 large servings (or 4 small)
INGREDIENTS
- 1 red onion, thinly sliced
- Simulated bacon, cut into pieces
- 1 green and 1 yellow bell pepper, diced
- 2-3 stalks celery, chopped
- 1 carrot, grated
- 1 tomato, diced
- 250g cooked macaroni
- 2 tablespoons Mac ‘N Cheeze sauce
- 1 tablespoon Chimichurri pesto
- Salt and pepper to taste
The perfect salad for a picnic or kids’ lunch. Colorful, tasty and nutritious.
INSTRUCTIONS
- In a large pot of boiling salted water, cook macaroni according to package instructions. Drain and cool.
- In a large salad bowl, combine cooked macaroni, peppers, celery, grated carrots, tomato, red onion and simulated bacon.
- Add Mac ‘N Cheeze sauce and Chimichurri and toss until all ingredients are well coated.
- Serve chilled and enjoy!
