Chimichurri macaroni salad with Mac ‘N Cheeze sauce

Time: 15 minutes

Yield:  2 large servings (or 4 small)

INGREDIENTS

  • 1 red onion, thinly sliced
  • Simulated bacon, cut into pieces
  • 1 green and 1 yellow bell pepper, diced
  • 2-3 stalks celery, chopped
  • 1 carrot, grated
  • 1 tomato, diced
  • 250g cooked macaroni
  • 2 tablespoons Mac ‘N Cheeze sauce
  • 1 tablespoon Chimichurri pesto
  • Salt and pepper to taste

The perfect salad for a picnic or kids’ lunch. Colorful, tasty and nutritious.

INSTRUCTIONS

  1. In a large pot of boiling salted water, cook macaroni according to package instructions. Drain and cool.
  2. In a large salad bowl, combine cooked macaroni, peppers, celery, grated carrots, tomato, red onion and simulated bacon.
  3. Add Mac ‘N Cheeze sauce and Chimichurri and toss until all ingredients are well coated.
  4. Serve chilled and enjoy!
