Rotini pasta with chimichurri pesto and fresh vegetables

INGREDIENTS
- 350g of rotini pasta
- 1 pouch of chimichurri pesto
- 200g of cherry tomatoes, halves
- 1 small red onion, very thinly sliced
- 100g of grated parmesan
- Salt and pepper, to taste
Whip up this easy rotini pasta with chimichurri pesto, cherry tomatoes and red onions. A fresh meal in under 30 minutes!
INSTRUCTIONS
- Bring a large pot of salted water to boil. Cook the rotini according to package instructions. Drain, reserving a bit of the cooking water.
- Return the warm pasta to the pot. Add the pouch of chimichurri pesto and mix well. If needed, add a bit of the reserved pasta water to loosen the sauce.
- Divide the pasta into serving plates. Top with the fresh cherry tomates and red onion. Add parmesan, salt and pepper to taste.
