Rotini pasta with chimichurri pesto and fresh vegetables

Serves: 4

INGREDIENTS

  • 350g of rotini pasta
  • 1 pouch of chimichurri pesto
  • 200g of cherry tomatoes, halves
  • 1 small red onion, very thinly sliced
  • 100g of grated parmesan
  • Salt and pepper, to taste

Whip up this easy rotini pasta with chimichurri pesto, cherry tomatoes and red onions. A fresh meal in under 30 minutes!

INSTRUCTIONS

  1. Bring a large pot of salted water to boil. Cook the rotini according to package instructions. Drain, reserving a bit of the cooking water.
  2. Return the warm pasta to the pot. Add the pouch of chimichurri pesto and mix well. If needed, add a bit of the reserved pasta water to loosen the sauce.
  3. Divide the pasta into serving plates. Top with the fresh cherry tomates and red onion. Add parmesan, salt and pepper to taste.
