Puff Pastry Crown with Pesto, Feta, Tomatoes, and Chives

INGREDIENTS
- 1 sheet of store-bought rectangular puff pastry
- 170g of garden pesto or live sun-dried tomato pesto
- ½ cup crumbled feta
- ⅓ cup finely diced cherry tomatoes or chopped tomatoes
- 2 tbsp finely chopped fresh chives (or fresh basil, chopped)
- 1 beaten egg
- Sesame seeds (for garnish)

INSTRUCTIONS
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface. Spread the entire surface with garden pesto or live sun-dried tomato pesto.
- Sprinkle the feta, tomatoes, and chives evenly over the surface. Roll the pastry lengthwise to form a long log. Seal the edge. Using a knife, make incisions all around the log (about ⅔ of the way through), spacing them every 2 to 3 cm, then bring the ends together to form a crown. Seal the joint.
- Brush the pastry with the beaten egg. Bake for 25 to 30 minutes, or until the pastry is golden and crispy. Serve warm, topped with a few sprigs of fresh chives for garnish, if desired.
