Roasted vegetable sandwich with hummus and live sun-dried tomato pesto

INGREDIENTS
- 2 slices of bread, of choice
- 2 tbsp hummus
- 1 tbsp live sun-dried tomato pesto
- 100g arugula
- Roasted vegetables (zucchini and bell peppers)
- Salt and pepper, to taste
Easy hummus sandwich recipe with sundried tomato pesto and grilled vegetables. A nutritious and tasty lunch ready in minutes.
INSTRUCTIONS
- Mix the hummus with the live sun-dried tomato pesto.
- Spread the mixture on both sides of the bread.
- Add a handful of arugula on one side of the bread.
- Place the roasted vegetables on top of the arugula. Add salt and pepper to taste.
- Close the sandwich and enjoy.
