Roasted vegetable sandwich with hummus and live sun-dried tomato pesto

INGREDIENTS

  • 2 slices of bread, of choice
  • 2 tbsp hummus
  • 1 tbsp live sun-dried tomato pesto
  • 100g arugula
  • Roasted vegetables (zucchini and bell peppers)
  • Salt and pepper, to taste

Easy hummus sandwich recipe with sundried tomato pesto and grilled vegetables. A nutritious and tasty lunch ready in minutes.

INSTRUCTIONS

  1. Mix the hummus with the live sun-dried tomato pesto.
  2. Spread the mixture on both sides of the bread.
  3. Add a handful of arugula on one side of the bread.
  4. Place the roasted vegetables on top of the arugula. Add salt and pepper to taste.
  5. Close the sandwich and enjoy.
