Tofu scramble on avocado toast

Prep time : 25 minutes
Servings : 4

INGREDIENTS

  • 1 teaspoon unsalted plant butter
  • 1 large onion, minced
  • 220g firm tofu
  • 1 pinch of turmeric
  • 1 tsp garlic powder
  • 2 green onions, minced
  • 4 slices of your choice of bread
  • 2 small avocados, sliced
  • 2 ripped tomatoes
  • Salt and pepper, to taste

Scrambled tofu on avocado toast : a simple and nourishing recipe for a balanced and flavorful breakfast or brunch.

INSTRUCTIONS

  1. Use the unsalted plant butter to butter the pan. 
  2. Sauté the onion til golden.
  3. Add the tofu to the pan. Smash directly in the pan. 
  4. Mix a pinch of turmeric, salt, pepper and garlic powder.
  5. Toast and butter the bread. Layer the avocado, tomatoes and tofu scramble. Drizzle the green onions on top.
